Parmesan Sausage Rice Balls

I was in need of a snack for the family. All I had was some leftover Italian sausage and some cheese. So I raided the pantry and threw together this number. Everybody loved them. So here ya go – Parmesan Sausage Rice Balls – I’ve got to come up with a better name. . . .

Directions:

Combine 1/4 cup of dry white rice with 1/2 cup water. Bring to a boil and simmer 10-15 minutes or until rice has absorbed all the liquid. Set aside to cool.

Combine 1/2 pound of sausage, 1/4 cup shredded Parmesan cheese, and cooked rice.

Using a rounded tablespoon shape the mixture into sixteen balls. Stuff each ball with a small cube of mozzarella cheese.

Roll the sausage balls in fresh bread crumbs and place on a baking sheet.

Bake in 400 degree oven for 20-30 minutes, turning occasionally to brown all sides.

Serve with marinara sauce. Enjoy.
